Dairy Products & Beverages
Casein and Caseinate share key functions in dairy products, including emulsifying, stabilizing, and texturizing. They provide firmness and elasticity in processed cheese, while enhancing water retention and improving texture in creams, whipping cream, cheese analogues, processed and spreadable cheese, and smoothies. In non-dairy creamer they can act as the emulsifying agent.
